Banana Choc Muffins

INGREDIENTS
30g butter
1 cups self-raising flour
1/4 cup caster sugar
1/4 cup milk
1 eggs
1 ripe bananas, mashed
1/2 cup (100g) Nestle Dark Choc Bits
METHOD
Preheat oven to 200°C. Line a medium muffin tray (6 sections) with paper cases. Melt butter in a small saucepan or heat-proof bowl in the microwave. Set aside to cool slightly.
Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined. Stir in choc bits. Don't beat the mixture or the muffins will be tough.
Spoon the mixture evenly into the muffin cases. Bake for 20 minutes or until firm on top when lightly touched. Leave in the tray for 3 minutes. Transfer the muffins to a rack to cool.

Blueberry Muffins

INGREDIENTS
1 cups self-raising flour
45g butter, chopped
1/4 cup firmly packed brown sugar
70g fresh blueberries
½ cup milk
1 eggs, lightly beaten
METHOD

Preheat oven to 180°C/160°C fan-forced. Grease or place muffin papers in a 6-hole, 1/3 cup-capacity muffin pan.
Sift flour into a bowl. Using fingertips, rub butter into flour until mixture resembles fine breadcrumbs. Stir in sugar.
Make a well in centre of flour mixture.
Add blueberries, milk and egg. Gently stir until just combined. Spoon mixture into prepared Tin. Bake for 25 minutes or until a skewer inserted in centre of 1 muffin comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool.

This was quiet nice slightly heated with a little butter.
I enjoyed the blueberries in the muffin not normally being a
big fan of them but they added to the flavour and it was great!

Orange & Poppy Seed Muffin

INGREDIENTS
Melted butter, to grease
1/2 T poppy seeds
185ml (3/4 cup) milk
190g (1 1/4 cups) self-raising flour
80g (2/3 cup) caster sugar
65g butter, melted
1 egg, lightly whisked
1 tsp finely shredded orange rind
30 ml fresh orange juice
Icing sugar, to dust
METHOD
Preheat oven to 190°C. Brush six 80ml (1/3-cup) capacity non-stick muffin pans with melted butter to lightly grease. Combine the poppy seeds and 60ml (1/4 cup) of the milk in a small bowl. Set aside for 10 minutes.
Combine the flour and sugar in a large bowl. Add the poppy-seed mixture along with remaining milk, butter, egg, orange rind and juice, and stir with a metal spoon until just combined (do not over mix). Spoon the batter among prepared muffin pans. Bake in preheated oven for 25 minutes or until a skewer inserted into the centres comes out clean. Remove from oven and turn onto a wire rack. Serve warm or at room temperature dusted with icing sugar.

unless ofcorse they are allergic to oranges :)

Jam Donut Muffin

INGREDIENTS
300 (2 cups) self-raising flour
2/3 cup caster sugar, plus 1/2 cup extra to coat
80ml vegetable oil
1 large egg
175ml buttermilk
1 tsp vanilla extract
3 tsp good-quality strawberry jam
100g unsalted butter
1 tsp ground cinnamon
METHOD
Preheat oven to 180°C and grease a 6-hole muffin pan.
Sift the flour into a medium bowl, then add a pinch of salt and the caster sugar. In a jug, combine the vegetable oil, egg, buttermilk and vanilla extract. Add to the dry mixture and stir to only just combine. Place a spoonful of the mixture in each muffin hole and make an indent in the centre. Fill each indent with a generous 1/2 teaspoon of strawberry jam. Cover the jam with the remaining muffin mixture and bake for 20 minutes. Remove from the oven and set aside to cool slightly.
Meanwhile, melt the butter. Combine the extra sugar and the cinnamon in a large bowl. When the muffins are cool enough to handle, brush each muffin with the melted butter, then roll in the cinnamon sugar. Serve while still a little warm.

Aunty Pat's Pavlova

They aren't meant to be cracked. They still taste fine.
INGREDIENTS
2 XL Egg Whites
1 1/2 cup Caster Sugar
1/2t Vanilla Extract
1t Vinegar
1t Corn Flour
METHOD
Preheat oven to 170
Add all ingredients to bowl
Boil jug- get exactly 1/4 cup boiling water.
Start beating and add water
(if you add before you start beating it will cook the Egg Whites).
Beat for roughly 15mins or until stiff peaks.
Spoon on to baking tray on paper
Stick in over for 10 mins @170 the turn oven down to 110
Continue to cook for 40mins.
Turn oven off and leave in oven to dry out the inside.

Serve with
Crushed traditional Fruit salad
Whipped Cream
Strawberries

I couldn't get my mixture to stiff peaks as the eggs i used weren't large enough.
I have always loved this. Its a great cheap dessert to feed your friends when they
come over for a bite for dinner.

Egg Cabonara

INGREDIENTS
1/2 cup Bacon (Diced)
1/2 cup Onion (Diced)
3 eggs
1/4 Cup Parmasan Cheese
2 Garlic Cloves
2t parsley
2T Garlic Chives
250gms Pasta
METHOD
Place pasta in water that is already boiling cook to instructions.
Cook bacon and onion on a medium heat with 1t oil and Garlic until Crisp.
Whisk eggs. Add Cheese and herbs.
When pasta is cooked Drain.
Run egg mixture over past in a pot on low heat. continuosly stir until egg is cooked.
Add Bacon and Onion and stir thru.

Pasta Bake

INGREDIENTS
500gm Mince
100g Salami
1/ 2 Large Onion
1 Dolmio extra Onion, Garlic and Tomato Sauce
2 Cloves Garlic (Crushed)
400gm Elbow Pasta
1/4 cup cheese
White Sauce
1 1/2T Corn flour
2 cups milk
1 1/2T Butter
METHOD
Place Pasta in large pot of already boiling water
Combine Mince Onion and Garlic in a pan on a medium
heat cook until mince is browned.
Add Dolmio sauce Tomato Sauce and salami.
Simmer for 10 mins.
White Sauce
Melt butter in a medium pot (large enough to hold 1L).
Combine Milk and corn flour in jug stirring all threw.
Poor milkmixure into pot and Bring to boil, continuosly
stir until thickend wisk if becomes lumpy.
Combine pasta and mince in Oven Proof dish.
Poor white sauce over the top to create another layar.
Sprinkle cheese over top.

Place in oven and cook rouglhy 20mins or until cheese is
golden brown.

This was just an experiment and it turned out to be quite a nice one.
Ben and i both took these for lunches for 2 days after it was made.
Its easy to make and not too time consuming if you know how to
make a white sauce.

Pineapple Up-side Down Cake

INGREDIENTS
440g can pineapple thins in natural juice, drained
125g butter, softened
3/4 cup firmly packed brown sugar
2 teaspoons vanilla extract
2 eggs
1 1/4 cups self-raising flour, sifted
1/2 cup plain flour, sifted
1/2 cup milk
Caramel topping
75g butter, melted
1/3 cup firmly packed brown sugar

METHOD
Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 22cm round (base) cake pan. Line base and side with baking paper.
Make topping Whisk butter and sugar together in a bowl until combined. Pour into prepared pan
Pat pineapple dry with paper towel. Arrange pineapple over caramel, pressing down into caramel. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Add eggs, 1 at a time, beating after each addition. Add flours and milk. Stir to combine. Spoon mixture over pineapple. Smooth top.
Bake for 50 minutes to 1 hour or until a skewer inserted into the centre of cake comes out clean (cover loosely with foil if over-browning during cooking).
Stand in pan for 10 minutes.
Turn out onto a wire rack.

Chocolate Pudding

INGREDIENTS
Melted butter, to grease
150g (1 cup) self-raising flour
100g (1/2 cup) caster sugar
2 tbs cocoa powder
125ml (1/2 cup) milk
50g butter, melted
1 egg, lightly whisked
Thickened cream, to serve
Chocolate sauce
155g (3/4 cup, firmly packed) brown sugar
2 tbs cocoa powder
375ml (1 1/2 cups) boiling water




METHOD
Preheat oven to 170°C. Brush a 1.5L (6-cup) capacity ovenproof dish with melted butter to lightly grease.
Combine the flour, sugar and cocoa powder in a medium bowl. Make a well in the centre.
Combine the milk, butter and egg in a large jug. Gradually pour the egg mixture into the flour mixture and stir until well combined. Pour into the prepared dish and use the back of a spoon to smooth the surface.
To make the chocolate sauce, sift the sugar and cocoa powder into a bowl. 4Sprinkle over the pudding mixture in the dish.
Gently pour the boiling water over the cocoa mixture.
Bake in oven for 35-45 minutes or until a cake-like top forms and a skewer inserted halfway into the centre comes out clean.
Set aside for 5 minutes to cool slightly.
Serve with thickened cream, if desired.

I was surprised with this one!.. i didn't think it would be so easy
and turn out as delicous as it did. I think i could have left it for a
few more minutes for the sauce to thicken slightly.

Oven Baked Turkish Toast

INGREDIENTS
1 Turkish bread Roll Sliced in halve
Butter
Jam or Honey
METHOD
Pre-heat oven to 180
Spread butter onto the bread and toast until Golden brown. 10 mins ?
Put on your favourite spread and enjoy.

Its simple and it's tastey.

Robyn or Sophie Cooking/Taste Review-
This is breakfast with a crunch. As Ben says in the review add more butter
to make it moist in the centre. but i do like it crispy instead of soggy!
Easy to make and to serve!
Why not try underneath a poached egg and holindaise sauce.

Robyn's Toasted Breakie


INGREDIENTS
2 Rashes Bacon
1 Egg (Scramble)
1/4 cup cheese
BBQ Sauce
2 slice Bread
Butter
METHOD
Preheat Sandwich toaster.

This all has to be done very quickly or the bottom bread may burn.

Spread butter on one side of each of the slices Bread
Add a small amount of BBQ sauce to the non buttered side of the bread and a third of the cheese add on the bacon covering the whole slice bread.
Place the Buttered side of the bread face down on sandwich toaster.
Press down on the bacon until slightly Browned.
Add a barier of cheese around the edges of the bread on the bacon and poor on a small amount of the egg on. continue to add egg until no more will fint on bread. Close the the sandwich press holding it so the egg does not press out.
When egg is cooked add rest of cheese and another small amount of BBQ Sauce.
Put on the slice of bread and press until it is golden brown.

This is something i just came up with one day. It is Tastey and quiet simple to cook.
You have to put it all together quickly tho. So have everything ready to go.
This is a good breakfast.

Pesto PAAAASSSTA

INGREDIENTS
1/2 cup Basil (Blended)
1/2 cup Parsley (Blended)
2T Garlic (Chropped)
1/4 cup Olive oil
2T Pine Nuts (Fineley chopped)
1/4 Parmesan Cheese (Grated)
300gm Fettichini (Fresh is best)
METHOD
Boil water in large Saucepan.
When water is boiling cook pasta as per instructions on packet.
Tip pasta into strainer when cooked, run hot water to rinse off.
Mix all ingredients together with pasta. make sure to cover all pasta.
Serve with a little sprinke of grated Parmesan Cheese and some Chicken?

Robyn's Sweet Pancakes

INGREDIENTS
1 cup Plain Flour
1/4 cup Sugar
1 Eggs
3/4 cup milk
1T Melted Butter

METHOD
Combine all ingredients in a bowls and wisk or beat until Well combined.
Get a Serving spoon and soon contence into a medium heat pan with melted butter.
Flip panckae when most of the bubbles have popped.
When golden brown on each side.
Continue to make until mixture is all gone :)

Serve with Banana, Strawberries and some Maple Syrup if you wish.

Robyn's Review -
These are quite easy to whip up and serve to guest in the morning... oh and CHEAP :)
They are good to have occaisionly as a treat.

Don't add in too much sugar. They were ok.

Beef Stroganoff in Vol au vents

INGREDIENTS
600g lean Steak (Sliced)
1 1/2T Flour
2T Smoked Paprika
1 1/2T Olive Oil
1T Butter
1 Large Onion (Finely Sliced)
2T Dijon Mustard
2 Garlic Cloves (Crushed)
2T Chopped Thyme
250gm Mushrooms (Chopped)
1/2 cup Brandi
150ml Beef Stock
300ml Sour Cream
Vol au vents
2 sheets Puff pastry
METHOD
Coat meat with flour and paprika. Heat oil and Large pan on high
Fry quickly until meat is sealed. set aside
Reduce pan to a medium heat. add butter, onion and cook for 2mins.
Add garlic, mushroom and thyme cook for 2 mins.
Stir in mustard, brandi and stock. bring to boil for a min.
Stir in sour cream. Add meat and all the juices. season with salt & pepper.

Vol au vents
Cut puff pastry into 4 squares and push in a large muffin tin.
Cook for 20mins.

Serve in vol au vents.

Rob's Puffin Breakfast

INGREDIENTS
2 Sheets Puff pastry (Cut into 4 squares)
4 full rashes of Bacon (diced)
1/2 Onion (diced)
4 Eggs
1/3 cup Milk

 
METHOD
Preheat oven to 180.
Cook onion and bacon in a mediun pan on a medium heat in 1T Oil.
Scramble eggs with milk.
Rub butter around large muffin tin casings.
Push puff pastry into a large muffin tin.
Place this in oven for roughly 5 mins.
Take Puff pastry out of the oven.
Spoon in bacon and onion into pastry cases.
Spoon in egg mix.
Place in oven for 15mins or until egg and puff are golden brown.

Tomato
And many more delicous things.

I think that these are a delight. I woke up and was like I'm going
to put this and here and cook it in the oven in puff pastry. I think
it's the best breakfast i have had in years.

a good review. When i was uploading the photo he asked if we could
have them for diner... So i Guess he loved them!

Omelette

INGREDIENTS
1/2 Tomato (Diced)
Onion (Diced)
1/2 cup Cheese (Grated)
Shallots (Finely Chopped)
1 rasher of Bacon (Cut in halve)
3 Eggs (Scramble with 1T milk)
1t Butter


METHOD
Put Butter in pan.
Add bacon to pan and fry slightly on each side.
Slightly brown onions, add tomato and fry.
Add egg and cook with out flipping on a medium low heat.
When cooked through, sprinkle on half the cheese and carefully fold Omelette in half.
Put on a plate, add shallots and left over cheese.

I love this as a breakfast. Its easy to make as long as you can get it from the pan
to the plate with out it falling to bits. I seam to have this problem when I'm very hungry.

Robyn's Tomato and Onion PIE

INGREDIENTS
250gm Beef (small Chunks)
1 Med Onion (chopped)
3 Garlic Cloves (Crushed)
2t Beef Stock
2t Corn Flour
1/4 Boiling Water
1 tin Diced Tomatoes
1 Tomato (sliced)
3 sheets Puff Pastry
METHOD
Preheat oven to 180.
Get a heat proff jug and combine beef stock and corn flour with Boiling water.
Fry Onoin with Garlic  and a teaspoon oil in a pan on medium heat.
Add meat after 2 mins.
(I know most of you dont like you meat bleeding but to avoid it getting tough you will have to add other ingredients while it is still pinkish).
When meat is lightly browned add tin Tomatoes and beef stock mix.
Stir until dish is thickend. (You will still need liquid so your pie doesnt get too dry).
Cut each puff pasty squares to size to fit your dish or tray. (Butter before Pushing down into dish).
Push in puff pastry for the bottom lining of your pie.
Have all of the tops for pies ready and place Tray with pie bottoms in oven for 5 mins at 180.
Take out and Quickly spoon mixture into each pie, place top on pie.
Put back in oven for roughly 25mins or until golden brown.
Enjoy!

I thought that this was good. Maybe add a little Gravox just to make the
Gravy flavour. i am pretty impressed as i havent made a pie sauce before
other then good ole Sheppards Pie but thats another storey. I hope you

Robyn's Curry Pie

INGREDIENTS
250gms Mince
1/2 Onion (Finely Diced)
1t Beef Stock
2t Curry Powder
1t Tumeric
2t Papricka
3/4 cup boiling water
METHOD
Preheat oven to 180.
Get a heat proff jug and combine beef stock, curry powder, tumeric and papricka
with boiling water. Cook the Onion in a teaspoon of oil on a medium heat.

Well to be honest... I HATE CURRY. I made this cause I'm such a

T-Bone with Creamy Garlic Sauce

INGREDIENTS
1 thick cut T-bone
250mls Thickend Cream
2T Garlic (Crushed)
1t Garlic Chives
1T Butter
METHOD
Cook T-bone to liking.
Fry in seperate pan garlic in butter.
Add cream to pan and simmer until slightly thickend.
Sprinkle in garlic Chives.

Rob's Stuff Capsicum

INGREDIENTS
1/2 Zucchini (Diced)
2 large Mushrooms (Diced)
1/2 Carrot (Diced)
1/2 Onion (Diced)
1/4 Capsicum (Diced)
1 stice Asparagus (Diced)
1 large Capsicum (Chop off top)
METHOD
Pre-heat oven to 180 deg.
Fry all Ingerdients in a pan on a medium heat.
Slice capsicums to fill.
When mixture is golden brown.
Put capsicums on oven tray and spoon in mixture.
Place capsicum top on the top and fasten with tooth picks incase it slides off.
Turn oven down to 160 deg. Cook in the oven for roughly 45mins.
Remove when the skin of the capsicum is easy to remove.. do not burn the capsicum.

Rob's version Bruchetta

INGREDIENTS
3 fresh crisp Tomatos
1/2 Red Onion
5 large fresh Basil Leaves
4T Balsamic Viniger
2t Soy Sauce
Garlic Bread
Tiger bread
2T Garlic
100mls Oil
METHOD
Dice all fresh ingredients
Place into Balsamic vinigar, leave for 30mins in fridge before serving
Bread
Slice bread to 1cm thick or thinner
Lightly Toast in the oven
Melt butter and add in garlic crushed
Baste on lightly toasted bread
Toast in oven until golden brown and crispy.

Well i enjoyed this very much. I made way too much so just stick to this recipe
that is here. you may need to add some more flavours for your own taste.



Potato Bake

INGREDIENTS
6 Large Potato's
1/3 Onion (Diced)
French Onion Soup Powder
350ml Thickend Cream
2T Garlic (Crushed)
1/2 cup Cheese
METHOD
Slice potato's as Thinely as posible.
Layer evenly over oven proof dish, in the middle sprinkle in the onion.
Mix cream and halve of the Onion Soup Mix together with garlic.
Poor mixture over the top of the potatos

Place in oven for 90mins.
Sprinkle cheese over in the last 15 mins place back in oven.
If potato is sliced thinley it shall be cooked.
TASTINESS YOU CAN ADD
Brocolli
Sweet Potato
Fresh Beetroot
Pumpkin

This is simple to make... Easy to make after work... Potato's and
then all you have to do it put it in the oven for a while.
Maybe serve with some veggies.

Taste Tester Review-
I thought that this was tastey. The onion gave it a good flavour.
Maybe try sweet potato, Halve halve.

Robyn's Sweet Daquari

INGREDIENTS
6 Strawberries
30mls White Rum or Bacardi
15mls Cointreau
10mls Lemon Juice
1 cup Ice

Add 1T Sugar if too sour
May make more then 1 Glass
METHOD
Start typing method here in this text...
Put all Ingredients into a blender.
Blend together adding more ice if you prefer.

Poor into a cocktail glass and drink responsibly :)
TASTINESS YOU CAN ADD
You may change strawberries for
3/4 cup Fruit Salad
10 Raspberries
10 Blueberries
4 Passion Fruit
And Why not experiment.

I have always loved a good cocktail especially an easy one to make
once again all you do is blend and you are on your way.
the flavour of this one can vary, I find that this has a sour bite too it and
can be very citrisy.

Robyn's Mini Cheese Cakes

INGREDIENTS
1 Crunchie bar (Crushed)
1 Flake bar (Crushed)
300ml Cream (Stiff Peaks)
250gms Marscapone Cheese
25ml Light Port
Base
150gms Butter (Melted)
20gms Choc Chips (Crushed)
1.5 Packets Chocolate Ripple Biscuits (Crushed)
METHOD
Get out your smallest Muffin tin.
Coat with butter to stop sticking.
Base
Add all ingredients into a bowl and mix in well with hands.
Make sure the mixture in sticking well together.
Spoon out into muffin tin 1T in each. Smooth down on bottom of tin.
Place in fridge while preparing cheesecake mixture.
Cheese Cake Mixture
Whip cream to stiff peaks.
Fold in marscapone cheese.
Fold in crushed chocolate and light port.

Flatten over the biscuit bases.
Cover and place in fridge to set.


Robyn or Sophie Cooking/Taste Review-
These are very easy to make... Just make sure you whip the
cream to stiff peaks. Also make sure to cover when you refriderate
as i made this mistake and was a small tougher layer on top.


Taste Testers Review-
This tasted like cream cake. Maybe try with the crunchie
mini bites instead, as the honey comb melted.

Homemade Potato Wedges


INGREDIENTS
4 waxy roasting Potatoes
2T Plain flour
Cracked black pepper
1T Chicken salt
1T Smoked paprika
1T dried Italian Herbs
Olive oil
2 Cloves of minced Garlic
Dash of Tabasco

METHOD
Cut Potatoes into wedges
Combine in a bowl with all ingredients and mix
Tumble onto a roasting tray and roast for 40 mins on 180 or until crunchy on the outside and squishy on the inside
Enjoy!
TASTINESS YOU CAN ADD
Aioli
Sour cream and sweet chilli

Sophie Cooking/Taste Review-
Holy Wedges! These are just amazing. The flour provides the foundation of the crust and holding agent for the flavourings. The only thing I find is that the garlic burns slightly, so garlic salt or dried garlic granules should work fine.

Taste Tester Review-
I was selfish on this recipe because i ate all of them myself and didn't leave any for anyone! They are too good to share (Sophie).
