Robyn's Sweet Daquari

INGREDIENTS
6 Strawberries
30mls White Rum or Bacardi
15mls Cointreau
10mls Lemon Juice
1 cup Ice

Add 1T Sugar if too sour
May make more then 1 Glass
METHOD
Start typing method here in this text...
Put all Ingredients into a blender.
Blend together adding more ice if you prefer.

Poor into a cocktail glass and drink responsibly :)
TASTINESS YOU CAN ADD
You may change strawberries for
3/4 cup Fruit Salad
10 Raspberries
10 Blueberries
4 Passion Fruit
And Why not experiment.

I have always loved a good cocktail especially an easy one to make
once again all you do is blend and you are on your way.
the flavour of this one can vary, I find that this has a sour bite too it and
can be very citrisy.

Robyn's Mini Cheese Cakes

INGREDIENTS
1 Crunchie bar (Crushed)
1 Flake bar (Crushed)
300ml Cream (Stiff Peaks)
250gms Marscapone Cheese
25ml Light Port
Base
150gms Butter (Melted)
20gms Choc Chips (Crushed)
1.5 Packets Chocolate Ripple Biscuits (Crushed)
METHOD
Get out your smallest Muffin tin.
Coat with butter to stop sticking.
Base
Add all ingredients into a bowl and mix in well with hands.
Make sure the mixture in sticking well together.
Spoon out into muffin tin 1T in each. Smooth down on bottom of tin.
Place in fridge while preparing cheesecake mixture.
Cheese Cake Mixture
Whip cream to stiff peaks.
Fold in marscapone cheese.
Fold in crushed chocolate and light port.

Flatten over the biscuit bases.
Cover and place in fridge to set.


Robyn or Sophie Cooking/Taste Review-
These are very easy to make... Just make sure you whip the
cream to stiff peaks. Also make sure to cover when you refriderate
as i made this mistake and was a small tougher layer on top.


Taste Testers Review-
This tasted like cream cake. Maybe try with the crunchie
mini bites instead, as the honey comb melted.

Homemade Potato Wedges


INGREDIENTS
4 waxy roasting Potatoes
2T Plain flour
Cracked black pepper
1T Chicken salt
1T Smoked paprika
1T dried Italian Herbs
Olive oil
2 Cloves of minced Garlic
Dash of Tabasco

METHOD
Cut Potatoes into wedges
Combine in a bowl with all ingredients and mix
Tumble onto a roasting tray and roast for 40 mins on 180 or until crunchy on the outside and squishy on the inside
Enjoy!

Aioli
Sour cream and sweet chilli

Sophie Cooking/Taste Review-
Holy Wedges! These are just amazing. The flour provides the foundation of the crust and holding agent for the flavourings. The only thing I find is that the garlic burns slightly, so garlic salt or dried garlic granules should work fine.

Taste Tester Review-
I was selfish on this recipe because i ate all of them myself and didn't leave any for anyone! They are too good to share (Sophie).

Ovened Marinated Ribs

INGREDIENTS
1/2 cup Sweet Chilli Sauce
1/2t grated Ginger
2T Soy Sauce
1 cup Flat Coke
1kg Pork Ribs Cut into sets of 3
METHOD
It's easier then 1 2 3
Add all ingredients to Bowl (other then Ribs)
Baste all Ribs and place to marinate over night or for 2hrs.

When ready to cook pre-heat oven to 180
Cook for 45mins
Baste 3 time every 10 mins
Leave to cook for last 15 mins.

Chocolate Coats

INGREDIENTS
8 large Strawberries (sliced in halve)
16 Raspberries
1 Apple (pealed)
Packet Marshmellows
Nuts you like (Almonds)

Chocolate- White Dark Milk
Toothpicks
METHOD
Stick all with a toothpick
Dip all of the Ingredients in Chocolate of choice.
But on a oven tray covered with baking paper.
Refridgerate then Serve
If you like you can decorate with the other Chocolates (as Pictured)
Unfortunatly they had no berries when i went to Woolies...
So i used Apple, Banana, Almonds, Vanilla Wafers and Marshmellows.

Spiced Nuts

INGREDIENTS
1/4 cup olive oil
2 1/2 cups of  mixed nuts
(peanuts, pecans, almonds, macadamias)
1/4 cup sugar
4 tspn salt
3 tspn cumin
3 tspn curry powder


METHOD
Fry nuts and sugar in oil with spices until golden brown
Remove from pan and cool until the sugar forms a slight crust
Enjoy!

Any nuts of your choice
spices such as paprika

These are sugary and savoury at the same time. The sugar makes them crunchy and also creates a setting for the spices.

Taste Tester Review-
I didn't get a chance to feed them to anyone, but they are a perfect snack for when you're drinking with the girls.

Shirley temple (mocktail)

INGREDIENTS
Ice
Juice of 1 lge orange
Ginger ale
30ml Rasberry cordial


 

METHOD
Half fill two glasses with ice
Divide orange juice between glasses
Pour in cordial
Fill the rest up with ginger ale
Garnish with a lime wedge and maraschino cherry (optional)

whipped cream
lemonade

Sophie Cooking/Taste Review-
Originally I wanted to make one that Robyn and I made in high school, but i couldn't remember how to make it so i googled it. Turns out the traditional Shirley Temple is a bit different to our high school one as Robyn kindly pointed out! So this is the traditional recipe but the one we made at high school had lemonade, grenadine and cream on the top. They are both nice, perhaps the high school one being a kitsch version.
Taste Tester Review-
Still flying solo this week. In saying that, it would be a good mocktail to serve in a jug with the icecubes i made from the leftover tangy fruit iceblocks as a kind of substitute punch.

Sophies Red Wine Mushroom Risotto


Ingredients
250g arborio rice
1 lge onion
2 cloves garlic
1 chicken stock cube
350g fresh mushrooms of your choice (i used portabello and cap mushrooms)
Red wine
Parmesan
Salt and pepper
Butter
Olive oil
Thyme, oregano
Water

Method
Dice onion, mushrooms -> mince garlic
Add above to a large pan with a dab of butter, a drizzle of olive oil and herbs
Saute (cook until golden brown) above, then pour in the rice
Lightly fry the rice and mushroom mixture together until the rice starts to whiten and seal
Splash in some red wine and reduce to halfway
Crumble in the stock cube and start to splash in the water (a 1/2 cup at a time)
When the water starts to dry out, splash another 1/2 cup in (this is called the absorption method)
Continue to add water until the rice is cooked
Take off the heat and sprinkle in Parmesan
Season with salt and pepper and enjoy!


Sophie's review- As i didn't have arborio i used long grain rice, its not as creamy but still nice. I was a bit sceptical about the red wine but it added a deep richness to the dish which would go nice with a red meat. Also good for vegetarians.

Casey's review- Very nice, Sophie served it on a whole portabello mushroom which acted as a base but was also delicious. I would have added a bit more pepper, but i like my things hot.

Sophie's Pumpkin and Bacon Rissoto





INGREDIENTS
200g arborio rice
2 rashers bacon
2 cloves garlic
100g pumpkin (i used jap)
1 brown onion
chicken stock
thyme
water
salt and pepper
Parmesan
METHOD
Dice the bacon, onion and pumpkin -> mince garlic
In a frying pan combine the above ingredients with thyme and saute until golden brown
Add the rice and stir until the outside of the rice is sealed (it will go opaque)
Crumble in the stock cube and add water in 1/2 cup bursts, waiting until each cup is absorbed until you add the next burst
When rice is cooked add parmesan and salt and pepper and enjoy!


TASTINESS YOU CAN ADD
If you have kids you can always sneak
in some small diced vegetables
 such as zucchini or carrot

Sophie's Cooking Review-
I used arborio rice from Aldi which I have to admit is not the nicest arborio I've ever used. But other than that it was really nice. I learnt how to cook this dish in grade eight and have been cooking it ever since.

Dailins Review-
I thought it needed a bit more salt and pepper but other than that, it was very tasty.

Pumpkin, Bacon and Cheese Arancini



INGREDIENTS
100g pumpkin and bacon risotto
Cheese of your choice (i used tasty)
2 eggs
1/2 cup cream or milk
Bread crumbs
salt and pepper
fresh oregano
Plain flour
METHOD
Take a dessertspoon of cold risotto and mould it into a bowl shape in your hands (wet hands work better with this)
Press the cube of cheese into the middle and mould the rice around the cheese to form a ball
Whisk together the egg and cream (or milk)
Add chopped oregano and salt and pepper to the breadcrumbs
Place the egg mix, breadcrumbs and flour in three separate bowls (this is called a crumbing station)
Dip the rice ball into the flour then the egg, then the breadcrumbs
Deep fry in hot oil until golden and enjoy!

This is a perfect way to use up any leftover risotto. Last time I made it, I used salami and bocconcini as the filling. You can really use anything you like as long as it complements the risotto flavours.

Robyns Rice Fry

INGREDIENTS
2 Cups Brown Rice
1/2 cup Challots (Chopped)
1/2 cup Onion (Chopped as liked)
1 cup Bacon (Diced)
1/2 cup Cabanna (Diced)
1/2 Left over Meat (Diced)
3/4 cup Peas Corn and Carrot (Cooked)
2 cloves Garlic (Fineley Chopped)
4T Soy Sauce
1T Sweet Soy (ABC Sauce)
3 Eggs (Scrambled)
METHOD
Cook Rice.
Cook Eggs in seperate pan. When cooked Slice
When Rice is cooked-
Add Onions with halve Garlic in oil.
When Onions are halve cooked add in Bacon
Add all other meats for browning and left over Garlic
Add in Egg plus Peas Corn and Carrot cook for roughly 5 mins
Stir in Rice continue to mix for 3mins
Add in Soy Sauces

Make sure rice is hot all over and Serve.
When serving sprinkle over Challots.

Leave the Soy Sauce out on the table so others
eatting the dish can add some to the dish if they like.

Left Over Meats (Roasts,Ham or Other).
Other Veggies (Brocolli, Cabbage, Colliflour,
Chilli, Tomatoes, Beans and Zuccini).
Robyn Cooking/Taste Review-
This dish is simple to to cook. i found that it is a little time
consuming but came out with a DELICOUS taste and
well worth the time spent. this is a great dish to serve on
the side maybe with Kebabs or a meat of your liking.

Creamy Rice Pudding With A Strawberry Surprise


INGREDIENTS
1/2 cup arborio rice
2 1/2 cups milk
1 tspn vanilla
1/4c caster sugar
Strawberry jam
Splash cream
40g butter
Caster sugar


METHOD
Pre-heat oven to 180
Heat the sugar, vanilla and milk until warm, add the rice
Slowly simmer until the rice is cooked, stirring occasionally
Stir through cream until mixture is silken and glossy
Spread the bottom of a baking dish with strawberry jam
Pour the rice mixture over the jam and dab butter randomly over top
Sprinkle caster sugar over top and back until the sugar starts to caramelise
Enjoy!

Orange liqueur
Sophies Cooking/Taste Review-
This is definitely an indulgent dish! I've cut back the sugar a bit because the jam is pretty sweet. A friend from work gave me this recipe and i cheffed it up a bit. It's very rich and creamy but absolutely delicious.

So another week comes to an END!

Hey People,

Been a little bit Ill this week so as promised i have not posted a few of the recipies...
but not to worry as i am sure you are! Next week will be back to normal.

Next week hitting our plates we have Rice Dishes.
Just a few dishes you will see... Robyn's Rice Fry, Rice Burgers and Bacon and Pumpkin Risoto...

Crispy Pizza Scrolls

INGERDIENTS
1 Sheet Puff Pastry
1T BBQ Sauce
1T Tomato Sauce
1T Diced Onion
1T Cooked Mince
Grated Cheese
1T Bacon
Can add extra of all ingregdients if you like.

METHOD
Keep plastic on back of Puff Pastry
Spread out sauces
Evenly Spread out the other Ingredients.
Tightly Roll
Stick in tooth picks too secure pasty in place.
Cut into 2cm thick rolls.
Spread Evenly over baking paper on oven try.

Place in oven and cook untill golden brown all over.

Robyn's Review- Sophie and i have been making these ever since we were probaly about 9 years old. they are easy to make, if you aren't impatient like me!
They aren't healthy... so they are YUMMY :)

Ben's Review - Tasety and very filling, probably best as a small entree or party food.

Minty Lemonade Iceblocks with a Fruity Tang


Ingredients:

500mls lemonade
Mint leaves
One small can fruit salad


Method:
Combine fruit salad, mint and spoon evenly into  ice block moulds
Pour lemonade over fruit
Under fill the ice blocks a smidgen as the lemonade tends to expand
Set in freezer overnight



Sophie's review:  The lemonade is sweet and tangy and the mint leaves cut through, adding some freshness. You can really add anything you want to these (for eg. berries of any kind, different soft drink or juice). I turned the rest of the mix into ice cubes.

Mid-week Catchup

Hello Follower... well i mean Facebookers :)

Its Midweek and the best it yet to come... well i think so

Still to come this week Crispy Pizza Scrolls, Minty Lemonade Iceblocks with a Fruity Tang and some simple Garlic Bread.

These snacks can all be made and eatten within a day. Iceblocks can freeze over night and the scrolls can be prepared in just 50mins and cooked in that time too. They are a warm tastey treat to be enjoyed by all.

CHOCOLATE Crackles

INGREDIENTS
1 Packet Chang's Original Fried Noodles
1T Crunchy Peanut Butter
200g Cooking Chocolate (Milk or Dark)



METHOD
Melt Chocolate and Peanut Butter.
Mix well into a smooth paste.
Fold in Noodles.
Spoon evenly out into small patty cake papers in a muffin tin.
Set in Refridgerator for about 1hr.




Robyn's Review- I personally do not like the peanut flavour in this. I do tho Love Chocolate crackles minus peanut butter ... maybe add cocconut or anyother nuts you may like.

Ben's Work Mates- Ben says they all liked it and they all Disapeared Very Quickly.

Creamy Avocado Dip


Ingredients:
2 Lge avocados
1 1/2 T sour cream
white vinegar
salt

Method:

Spoon avocado flesh into a bowl and mash with a fork
Place sour cream and vinegar in with the avocado and mix
season with salt

Sophie review: This was really delicious. You don't have to add the sour cream but it does add the smoothness and extends the dip.


Rachel's review: The dip was really creamy and delicious. I really liked the veg with it.

Other things you can add-
Finely Chopped Red Onion
Mayonnaise
Finely chopped Shallots

Savoury muffins

Ingredients:

225g self raising flour
4 tbsp butter
2 eggs
175ml milk
100g tasty cheese, grated
2 cloves garlic, minced
200g double smoked ham,diced
2 stalks shallot, chopped
2 teaspoons mustard (of your choice)
salt
cracked black pepper

Method:
Sift flour into a mixing bowl
In a separate bowl mix eggs, flour and melted butter
Slowly add the wet mixture to the dry mixture until it forms a gooey mix
Add shallots, cheese, ham, mustard and salt and pepper
Spoon into a greased muffin tray and bake on 180 for 20 mins or until golden brown

Sophies review: These are so tasty and so versatile. You can really add anything you want. I used gluten free flour but normal flour is fine.

Caseys review: My little girl took it to school in her lunchbox and she loved it. I like the way the cheese is distributed throughout the muffin.

Snack Attack

Hello Everyone,

This week we have SNACK ATTACK.
Sophie has made some sweet tangy Iceblocks and for you i have made some crispy warm Pizza Scrolls that Soph and I have been making since we were about 8 years old.

Snacks are something we all love to have I'm sure all of you have gone to the cupboard and wondered hmmmmm.... what can i make... well most of you will have all these Ingredients in your cupboard, so why not try it out and give it a rating?

Calamari

INGREDIENTS
1 Egg
2T Milk
500g Calamari (I cut my own from fresh Squid)
1 Cup Packaged Bread Crumbs
Vegitable Oil Deep for Frying


METHOD
Beat Egg and milk in small bowl.
Dip Calamari into egg mix, drip off extra egg mix.
Toss in bread crumbs, make sure bread crumb are stuck to calamari.
Heat oil in Sauce pan (enough to have cover calamri). Fry until golden Brown

Serve with Tartar Sauce and a Lemon Wedge.

Robyns Review- This is so simple for you to throw together in under 10mins then cook. Its fresh and DELICOUS... Well i like it.
If you are looking for something to just whip up for friends its simple and light also you can say you cooked it FRESH :)

Ben's Review - Very quick and simple to make and very tastey. Much more tender than anything you get from a take away place.

MAMMA MIA its Italiano week


This week we have travelled to Italy! We had beautiful creamy tiramisu and a rich chocolatey treat from Florence. We also had a delicious pasta dish and a crispy calamari entree.

Italy is all about the passion and food and thats why we decided to do this theme. You can always go out and buy takeaway pizza or pasta but its so much nicer to use fresh ingredients and create your own dish :)

The best thing about Italian food is that it can be so easy! So for all everyone out there we have a few easy recipes and a few medium (just to spice it up a bit ).

I hope you enjoyed our italiano week and be sure to give us your reveiws! we have no doubt that you will fall in love with italy too.

Osso Bucco



INGREDIENTS:
4 veal shanks or knuckles (750g)
(my butcher offered Osso Bucco pieces)
30gbutter                                                                           
2 carrots
2 large onions                                                                      
3 sticks celery
2 cloves garlic                                                                            
Flour
Olive oil
800g canned tomatoes
½ cup dry red wine
400ml Beef stock
Thyme
Basil
sage
Salt and pepper

METHOD
Pre-heat oven to 170 degrees
Dice onion, carrot and celery and combine in a large casserole dish with minced garlic, butter and olive oil
Add the thyme, basil, sage, salt and pepper and fry until onions are golden brown
If you are a multi-tasker, then while this is happening....
Gently press the osso bucco onto the seasoned flour on both side and dust off remaining flour
Lightly fry both sides of the osso bucco to seal the meat then place on the fryed veg
With the meat pan, get rid of the excess oil, then pour in tomatoes, red wine, beef stock and a bit of flour to thicken.
Bring to the boil, then pour over the meat and veg
Place in the oven with the lid on and cook for 3 hours (the longer you cook it the more tender it will be J )

Sophie Review:The meat was very tender and the sauce was rich and tomatoey. Just beautiful I used gluten free plain flour to press the meat with and halfway through the cooking process sprinkled a bit of flour in to thicken the sauce.
Rachel's Review: Very good job, cooked perfectly and the meat was very tender. well done

Tiramisu

Ingredients
2T Instant Coffee
1 1/4 Cups Boiling Water
1cup of Sweet Marsala (we used a Sweet Fortified Wine)
250g packet Sponge-Finger Biscuits
1/2 cup Thickend Cream
1/3 cup Icing Sugar
500g Mascarpone Cheese
40g Dark Chocolate
125g Berries

Method
Dissolve Coffee in the Boiling water in a medium bowl. Stir in 2/3 cup of Marsala, cool.
Dip biscuits in the mixture and slightly soak. place in bottom of the bowl. leaving halve for the top layar.
Beat Cream and Icing Sugar in a bowl. When stiff peaks fold in Mascarpone and remaining Marsalla.
Spread half the Cream mixture over the biscuits in the bowl.
Put on another layar of biscuits and add the rest of the cream.
Sprinkle chocolate on top.

Decorate with Berries.

Robyn's Review-
Ok so I'm not a Tiramisu person... I haven't ever had Tiramisu before and i ate it on the first night.
My tip to you is wait until the second night to eat it so prepare it the day before Guests come. It was much better the Next night and i enjoyed it very much as the Flavour had set in. If you don't like the Alcohol Flavour to over power i suggest using a little bit less in the coffee mixture.
This is a dish i would make for friends coming over for a dinner party and i wanted a EASY dessert to prepare. It is a bit exspensive tho, but deffinatly worth it in the end :)

Fettucine Carbonara


Ingredients:
500ml cream
1 pkt fettucine
2 cloves garlic
1 lge onion
4 rashers bacon
parmesan
salt and pepper

Method:
Bring a large pot of salted water to the boil
Meanwhile dice bacon and onion and place in a hot frying pan with minced garlic and olive oil
Cook until onions are golden brown
(by this point your water should be boiling. pour in the fettucine and stir for about a minute to avoid sticking)
Pour the cream into the onion and bacon mix and reduce until it starts to thicken slightly
Season and sprinkle with as much parmesan as you like

stir together the pasta and sauce and..

enjoy!

Tradionally, fettucine carbonara has an egg yolk cracked into the end of the cooking process. This brought together the sauce and added more protein. But because ive thickened the cream it doesnt need the egg.

Sophies reveiw: This is my partners (Dailins) favourite pasta dish and it is so easy to make. The bacon, onion and garlic is such a classic mix and the cream just tops it off. As i mentioned above, you can add an egg yolk but i prefer not too. You can also sprinkle with fresh parsley as it cuts out the the richness but still complements the flavours

Dailins reveiw: The pasta was well cooked and the sauce was beautiful. All together beautiful flavours.

Zuccotto


Zuccotto derived from woman's weekly and adjusted by Sophie

Ingredients:

20cm round sponge layer
2 tablespoons brandy
2 tablespoons orange liqueur
60g slivered almonds
60g whole blanched roasted hazelnuts
90g dark chocolate (60g melted) (30g chopped)
300ml un-thickened cream ¼ cup icing sugar

Method:

Cut cake in slices 1cm thick, cut into triangles and arrange in dish so the point is at the bottom
Roast nuts in the oven at 180 until slightly coloured-> cool
Combine brandy and liqueur, brush one side cake dome with mixture
Chop almonds and hazelnuts roughly, whip cream and icing sugar to stiff peaks
Fold nuts into cream mixture , divide mixture in half fold melted choc through one half and chopped choc through other half
Spread white cream mixture over cake and pour choc mixture in centre
Moisten leftover cake with liqueur mixture, create a lid for cake
Refrigerate overnight
Turn out and dust with cocoa

Total cook time: 4 hours
Sophies reveiw: this is such a delicious recipe. The sponginess of the cake contrasted with the creamy filling works so well. The nuts added a really nice flavour. This would be perfect for a dessert cake. The original recipe called for whole almonds but i decided to use slivered almonds as they are a smaller cut.
