Banana Choc Muffins

INGREDIENTS
30g butter
1 cups self-raising flour
1/4 cup caster sugar
1/4 cup milk
1 eggs
1 ripe bananas, mashed
1/2 cup (100g) Nestle Dark Choc Bits
METHOD
Preheat oven to 200°C. Line a medium muffin tray (6 sections) with paper cases. Melt butter in a small saucepan or heat-proof bowl in the microwave. Set aside to cool slightly.
Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined. Stir in choc bits. Don't beat the mixture or the muffins will be tough.
Spoon the mixture evenly into the muffin cases. Bake for 20 minutes or until firm on top when lightly touched. Leave in the tray for 3 minutes. Transfer the muffins to a rack to cool.

Malteasters
or what ever Chocolates you like.

Blueberry Muffins

INGREDIENTS
1 cups self-raising flour
45g butter, chopped
1/4 cup firmly packed brown sugar
70g fresh blueberries
½ cup milk
1 eggs, lightly beaten
METHOD

Preheat oven to 180°C/160°C fan-forced. Grease or place muffin papers in a 6-hole, 1/3 cup-capacity muffin pan.
Sift flour into a bowl. Using fingertips, rub butter into flour until mixture resembles fine breadcrumbs. Stir in sugar.
Make a well in centre of flour mixture.
Add blueberries, milk and egg. Gently stir until just combined. Spoon mixture into prepared Tin. Bake for 25 minutes or until a skewer inserted in centre of 1 muffin comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool.

This was quiet nice slightly heated with a little butter.
I enjoyed the blueberries in the muffin not normally being a
big fan of them but they added to the flavour and it was great!

Orange & Poppy Seed Muffin

INGREDIENTS
Melted butter, to grease
1/2 T poppy seeds
185ml (3/4 cup) milk
190g (1 1/4 cups) self-raising flour
80g (2/3 cup) caster sugar
65g butter, melted
1 egg, lightly whisked
1 tsp finely shredded orange rind
30 ml fresh orange juice
Icing sugar, to dust
METHOD
Preheat oven to 190°C. Brush six 80ml (1/3-cup) capacity non-stick muffin pans with melted butter to lightly grease. Combine the poppy seeds and 60ml (1/4 cup) of the milk in a small bowl. Set aside for 10 minutes.
Combine the flour and sugar in a large bowl. Add the poppy-seed mixture along with remaining milk, butter, egg, orange rind and juice, and stir with a metal spoon until just combined (do not over mix). Spoon the batter among prepared muffin pans. Bake in preheated oven for 25 minutes or until a skewer inserted into the centres comes out clean. Remove from oven and turn onto a wire rack. Serve warm or at room temperature dusted with icing sugar.

This is a great muffin to make for anyone who is coming over
unless ofcorse they are allergic to oranges :)
I enjoyed this. i would cook until golden brown. But dont forget them
and leave them in the oven like i did.

Jam Donut Muffin

INGREDIENTS
300 (2 cups) self-raising flour
2/3 cup caster sugar, plus 1/2 cup extra to coat
80ml vegetable oil
1 large egg
175ml buttermilk
1 tsp vanilla extract
3 tsp good-quality strawberry jam
100g unsalted butter
1 tsp ground cinnamon
METHOD
Preheat oven to 180°C and grease a 6-hole muffin pan.
Sift the flour into a medium bowl, then add a pinch of salt and the caster sugar. In a jug, combine the vegetable oil, egg, buttermilk and vanilla extract. Add to the dry mixture and stir to only just combine. Place a spoonful of the mixture in each muffin hole and make an indent in the centre. Fill each indent with a generous 1/2 teaspoon of strawberry jam. Cover the jam with the remaining muffin mixture and bake for 20 minutes. Remove from the oven and set aside to cool slightly.
Meanwhile, melt the butter. Combine the extra sugar and the cinnamon in a large bowl. When the muffins are cool enough to handle, brush each muffin with the melted butter, then roll in the cinnamon sugar. Serve while still a little warm.

Aunty Pat's Pavlova

They aren't meant to be cracked. They still taste fine.
INGREDIENTS
2 XL Egg Whites
1 1/2 cup Caster Sugar
1/2t Vanilla Extract
1t Vinegar
1t Corn Flour
METHOD
Preheat oven to 170
Add all ingredients to bowl
Boil jug- get exactly 1/4 cup boiling water.
Start beating and add water
(if you add before you start beating it will cook the Egg Whites).
Beat for roughly 15mins or until stiff peaks.
Spoon on to baking tray on paper
Stick in over for 10 mins @170 the turn oven down to 110
Continue to cook for 40mins.
Turn oven off and leave in oven to dry out the inside.
TASTINESS YOU CAN ADD
Serve with
Crushed traditional Fruit salad
Whipped Cream
Strawberries

I couldn't get my mixture to stiff peaks as the eggs i used weren't large enough.
I have always loved this. Its a great cheap dessert to feed your friends when they
come over for a bite for dinner.

Egg Cabonara

INGREDIENTS
1/2 cup Bacon (Diced)
1/2 cup Onion (Diced)
3 eggs
1/4 Cup Parmasan Cheese
2 Garlic Cloves
2t parsley
2T Garlic Chives
250gms Pasta
METHOD
Place pasta in water that is already boiling cook to instructions.
Cook bacon and onion on a medium heat with 1t oil and Garlic until Crisp.
Whisk eggs. Add Cheese and herbs.
When pasta is cooked Drain.
Run egg mixture over past in a pot on low heat. continuosly stir until egg is cooked.
Add Bacon and Onion and stir thru.

Pasta Bake

INGREDIENTS
500gm Mince
100g Salami
1/ 2 Large Onion
1 Dolmio extra Onion, Garlic and Tomato Sauce
2 Cloves Garlic (Crushed)
400gm Elbow Pasta
1/4 cup cheese
White Sauce
1 1/2T Corn flour
2 cups milk
1 1/2T Butter
METHOD
Place Pasta in large pot of already boiling water
Combine Mince Onion and Garlic in a pan on a medium
heat cook until mince is browned.
Add Dolmio sauce Tomato Sauce and salami.
Simmer for 10 mins.
White Sauce
Melt butter in a medium pot (large enough to hold 1L).
Combine Milk and corn flour in jug stirring all threw.
Poor milkmixure into pot and Bring to boil, continuosly
stir until thickend wisk if becomes lumpy.
Combine pasta and mince in Oven Proof dish.
Poor white sauce over the top to create another layar.
Sprinkle cheese over top.

Place in oven and cook rouglhy 20mins or until cheese is
golden brown.

This was just an experiment and it turned out to be quite a nice one.
Ben and i both took these for lunches for 2 days after it was made.
Its easy to make and not too time consuming if you know how to
make a white sauce.
